Hey, Neighbors and Pinners! I’m really excited to bring a great recipe from my blog, Pintesting to you. This Sun-Dried Tomato, Kale, & White Bean Skillet is one that I found on Pinterest shortly after we chose to pursue a more plant-based diet. It has become a regular in our menu planning so I wanted to share it with you.

Before we started Our Urban Homestead, I had a blog called Pintesting where I tested, reviewed, and rated Pinterest Pins. I set that aside for about a year and a half but now I’m testing recipes and other content that I’m finding on Pinterest that aligns with our lifestyle.

We really like this Sun-Dried Tomato, Kale, & White Bean Skillet because it’s easy, delicious, only takes a handful of ingredients, and it comes together quickly. It’s a perfect weeknight dinner!

Sun Dried Tomato Kale and White Bean Skillet - Served with Pasta

This dish is also super healthy! Kale, beans, and tomatoes are all considered superfoods. What are superfoods? They are nutrient-dense foods that are good for your health.

Kale:

  • High in vitamins and minerals: Vitamin A, Vitamin c, Vitamin K, Vitamin B6, Manganese, Copper, Calcium, Potassium, and more
  • Loaded with antioxidants and flavonoids
  • Lots of fiber and can help lower cholesterol
  • High in cancer-fighting compounds
  • High in Lutein and Zeaxanthin which protect your eyes
  • Can help you lose weight!

Beans:

  • Helps increase longevity
  • They have the perfect mix of protein, complex carbohydrates, and fat (the good for you kind)
  • Good for digestion
  • Helps regulate blood sugar
  • High in fiber and can help lower cholesterol
  • Helps with heart health and fights cancer

Tomatoes:

  • Helps protect against cancer
  • Reduces blood glucose in diabetics
  • Can lower blood pressure
  • High in lutein and lycopene which protects your eyes
  • Promotes healthy skin and hair
  • Reduces constipation

While these superfoods are extremely good for your health, they can also be contaminated with pesticides – especially kale and tomatoes. I prefer to choose organic whenever possible for these. And ALWAYS wash your fruit and vegetables. I use a vinegar and water bath as shown in this Pintesting for Lemon and Strawberry Detox Water.
