Mediterranean Flat Bread
This is an easy, quick, flavorful appetizer or meal.
Ingredients
- 1 Flat Bread
- 1/2 Cup Hummus
- 1/3 Cup Cucumber Seeded and chopped
- 1/3 Cup Roasted Red Peppers Chopped
- 1/3 Cup Kalamata Olives Halved
- 1 Cup Fresh Spinach Chiffonade sliced or chopped
- 1/2 Cup Coleslaw mix
- 1/4 Cup Greek Dressing I use Farmer Boy Restaurant brand
- Salt & Pepper to taste
Instructions
- Heat the flatbread in the oven per the instructions on the package. When finished, let cool slightly.
- While the flatbread is baking, prep the cucumber, roasted red peppers, and Kalamata Olives. Chiffonade slice the spinach then mix with coleslaw mix and dressing in a separate bowl.
- Spread flatbread with hummus and evenly top with chopped cucumber. Season with salt and pepper to taste, then top with roasted red pepper, and Kalamata olives.
- Sprinkle spinach mixture over entire flatbread. Slice as desired and serve.
Notes
This recipe is very versatile. You can add red onions, tomatoes, artichoke hearts, or whatever you like. If you’re not vegan, you can add feta or even chicken breast slices.
